I'll be honest, when I first tried kimchi, I was not a fan. The strong and fishy aftertaste put me off, and I thought I would never touch it again. But my sister, who is an adventurous foodie, encouraged me to give it another chance. She told me that kimchi is a staple in Korean cuisine and that many people love it for its tangy, spicy, and savoury flavour.
Being a food lover myself, I love to cook and experiment with new ingredients and dishes. I decided to take up the challenge and make kimchi from scratch, hoping to change my perception of it.
I followed a simple recipe online and watched few YouTube videos and carefully selected the freshest ingredients. I added my own twist by skipping the fish sauce and shrimp paste, as I wanted to avoid the overpowering flavour. And let me tell you, the result was amazing! The kimchi had a perfect balance of spice, tang, and heat, with a subtle hint of garlic and ginger. My sister and I couldn't stop eating it, and we finished a 2-liter jar in just one week! We consumed it with almost every meal.
After discovering the joys of homemade kimchi, I was inspired to keep experimenting and perfecting my recipe. I played with different vegetables, spices, and seasonings, constantly learning, and adjusting through trial and error. (I shall share some of those fails with you soon.) And today, I am proud to say that the kimchi you can buy from Zambur Ferments is a result of all that love and care.
